The heater in your car is connected to your radiator, this is why it happens

as said, the heater core is just a small radiator.

I've seen consistant drops of 4 - 5 degrees by turning the heat on and running the fans on max.

So say if I put the fans on full with full heat and just closed the vents so it wasn't so hot would it still be benifitial?

it would be yes. Cause the blower is pushing just as much air past the heater core as normal.

For best results i'd probably reccomend the vents open (at least the two on either side pointing out the window.)
