Have you checked your coolant levels? If its low it can overheat at idle but when driving cool air will enter the engine to cool it down.. could be that
Check your water pump for leaks as this can cause the problem too

it will fill ur overflow tank when hot because ur pressurising ur cooling system... thats y it will fill up but once it cools down it should put the coolant bak into the rad... if its not doing that then ur cap is stuffed... u can tell from under the cap the seals will be ruined...
u will loose water from the rad that way....
otherwise check whats happening by testing ur cooling system with a pressure tester...

be sure to get a TK head test done on your cooling system its cheap and can save u so much hassels its a tube u put in replace of your radiator cap filled with special dye if it changes colour whie your motor is running is means u have oil/blowby gas in your coolling system meaning you got a blown head gasket or cracked head but i dont think thats your problem i think maybe your thermo fans are not working or you have a blockage in your system hope i helped let us know when u fix it........
