Does anyone know of another way to pay someone when purchasing a vehicle instead of cash or bank deposit?

What are you afraid of? Bank cheque should be the best method.

I would say this is the best method, as you're not rolling around town with a wadd of cash, there's no chance of losing it/getting rolled. The seller might be reluctant at first, however remind them that they have your details (and vice versa) on the transfer of registration papers should the check not clear. Just be upfront, honest, and try not to appear 'shady' in anyway and they should be ok with it. Maybe take along a photocopy of your driver's license to give them as well. It seems like a lot of hassle, but if you come prepared then they'll be happy and the transaction will run a lot smoother.
This being said, waving a roll of hundreds on front of someone will give you better bargaining power. I've only ever bought cars with cash, and my reason is this:
Selling cars is a pain in the arse, and, even when a price is set, when you show up to get the keys the next day and flash all that money in front of them, something in their head says "gimme, gimme". If you explain that you came up a couple of hundred short, they will more-often-than-not still accept what you're offering. Just make sure the friend who drives you to pick it up can handle themselves should anything turn ugly.
