I purchased these Roh Wheels and would like to remove the paint...
What would be a good product to use? I've seen a few people use paint stripper
but worried about damaging the wheel

taut? Do you mean torque (the measure of how much turning force has been applied to the bolt)?

And paint stripper will only dissolve away the paint, wont affect the metal.

make sure you use industrial strength.

make sure you read the instructions on how to use paint stripper too

reasonably easy to f something up.

for example leaving it on for too long.

I found myself driving through empty carparks to stay the hell away from the speed humps within a shopping centre.
First time since I dropped it. Its shit, but the ride height is sex.
