With my K20A engine, should I be taking the oil levels from a cold temperature or from operating temperature. I'm getting two different oil levels and was curious to which one is the proper indicator.

Park on a level ground like in your garage and check in the morning.
That's the best way.
The oil level on the dip stick will be easy to see.

run it to operating temp then let it sit for 5 minutes

You check oil level on flat surface while the engine is cold. When ever u check the oil when ever its hot u will not get accurate level, because oil stay on the engine head.

First thing in the morning is good.
Or if you go for a drive, let it sit for 10 mins.
