sounds like you're doing it all wrong
re bleed the system from furthest point

That
And make sure the bleeding pipe is submerged in a container- easy to do but easy to stuff up if you are a novice

so a stock vti booster and mc should give me some brakes because i have nothing at the moment

no brakes = bleed properly
spongy = get bigger bmc
no brakes = bleed properly
spongy = get bigger bmc
no brakes = not bled at all
spongy = bleed brakes

peddle sinking to floor = it's by passing somewhere in the system

hes using bigger brakes with stock eg bmc which is like 13/16/
lots of pedal travel there

also like to add, if you didnt bench bleed the bmc before installing, it does take a bit more bleed cylces to completely bleed all the air out within the bmc. that could exhibit soft pedal feeling.

i changed mine brakes to bb4 (282mm, very similar to your dc2r brakes) on my EG using stock bmc and booster, and it was so soft and spongy no matter how many times i bleed, i even took it to the shop and bleed the system thinking i was doing it wrong.
then i got myself the brake booster and bmc (1") from a bb4 , and the brake padles are so firm after that.
i am not saying thats your issue, but it would be a good idea to change the bmc and booster to a bigger one even when the paddle is not spongy after installing bigger brakes. and hopefully that fix your problem.

another question.... i have all standard eg brakes at the moment, have noticed recently that sitting in traffic or at lights whatever, i push the pedal till its hard and then it kinda gives slowly and sinks down a bit more, havent been loosing any fluid, but any ideas as to how i can fix this....

two possibilities.
1)losing pressure in the system, can be a leak somewhere like brake hoses
2) lot of air in the system, you are pushing the brake fluids around as there is lot of air trap inside, have to bleed all the air out.

like i said, it happened to me, i even took out the bmc and booster and get professional clean and rebuild it too.
and it still feel spongy.
i replace the bmc and bb with BB4 items, it went so much better.

your pads wouldnt be worn, or sitting far from the disc surface?

Pads are still good, disc to pad distance is good

Pedal returns fine, the pedal is not stil.. Only to a point of the brakes biting. Besides that it feels like crap

Sounds like the bb or BMC not holding pressure. When did u change it? Did they banch bleed the system before putting into the car?

Thats the thing. I didnt bench bleed it. I did the conversion couple days ago
