First of all, what stud pattern is this EG? (And good luck getting it into the milking stall...) unless you have done a 5 stud conversion, you need 4x100 rims.

For tyres, generally you want to go with a 45 profile on a 16" rim for an EG. 205 will be closest to the stock diameter but 195 or 215 is still within reason. A 215/40 is pretty similar total diameter to the 195/45 and should still be ok.

In terms of rim size it all depends on what you are after. If you want the wheels to stick out and have all the camber and suspension adjustments required to make that work and look good then go with a low offset 8" wide rim. If you want it to fit easily and sit straight then go for the 7" and around a 30-42 offset

can you even get a 40 profile in 16? good luck.

If its just a daily, go for 15", much bigger tyre selection, cheaper tyres, can still have a nice looking eg on 15's.
