Just wondering if anyone knows if the sensor connected to the air filter box and the piping connecting to the exhaust is of any use?....ie can i install a custom air intake and not reconnect either of these items?...

Yes you'll need to connect the sensor back to the intake pipe. The sensor is for intake air temperature and the tube is for engine oil overflow.

so if i stick a oil breather type filter on it, will it still work?.....

yep it will
