I'm looking to change the wheels on a standard 2005 Euro from 16" to 17" rims.

Is there anything I need to watch out for and are there any good recommendations?

I don't need anything extreme or garish...a 'sports luxury' looking rim which shows off how good the Euro stance is is 17" wheels.

Recommendations for tyres would be gratefully received too...everyday driving, not performance work.

Where is good to look for this stuff in Melbourne?

Try to keep the widths and offsets similar to standard, if it just for looks. Look for a 7 or 7.5 inch wide rim, with offsets around +40 or so.

If you are worried about gaurds/suspension hitting, find some big rims that someone already uses and compare to what you want to buy, using this calculator.
