Also what are the benefits?

And also what exactly does it do?

a low temp thermo will allow water flow earlyer then normal
normally the thermo stayes closed untill the engine is warm then open up and allow the flow to cool the motor
the lower themp thermo will take longer to warm up the car
it is quite easy to fit pretty shure its just two 10mm bolts holding the casing and then just swop it over

Normally. people will put the low temp. thermostate and low temp. fan switch at the same time.
