Currently have 195/55 on my stock 15 x 6 rims. Looking to fit some 15 x 7 rims, can these tyres stretch wide enough without attracting unwanted attention?
Cheers.

They should. This is probably the widest rim that most tyre manufacturers would include in their recommended rim range for that size tyre, but not all tyres may be the same so you should check with a tyre store that stocks your brand.

Expect more responsiveness from the tyre on a wider rim, but more harshness as well. The tyre may like a different psi on the wider rim, you'll need to experiment.

Harshness is ok for me and responsiveness a good thing, I'm on Potenza RE001 if it helps.

If this is outside the manufacturer's recommended range then it's not really a good idea.
