have you checked plugs?

Throttle Position Sensor (TPS) possibly. If that's far out of whack or broken it would cause the engine to stall when you touch the throttle. Check it with a multimeter.
BUT. Before you do that, there is a very good chance that when you were mucking around with the loom you got the MAP sensor and TPS sensor plugs mixed up. They are the same plug so they fit on both sensors, but if this happens the car runs like shit and stalls. So check that first!
