Its great you got the upholstery company to comply the leather on the seats, that was something i wanted to do but was urged against by the dealers, I must admit that i have now gotten very used to the cloth seats as well and find them very comfortable, maybe if the fade happens in a coule of years get them re upholstered !!
Black cloth is alright....but ivory cloth is bad. A little bit of stain on that and it's bye bye to your seats. Glad that your std black Euro will be retrimmed with leather.
If you have the money, get aftermarket HID's. It's really good, and after using them, you can't go back to halogen again. It's not just a cosmetic thing, it actually benefits the user.

Aftermarket kit from USA is the way to go. From what I have read, ones with Philips or Hella ballasts are the way to go. You could try Honda spare parts, but since they charge about $7k for one S2000 seat, I think you would have a heart attack if they actually had them.

Once u have HID u can't go back to normal Holagen lights.. Driving at night with HID is definetly worth it and the blue/white/purple tinge is a definite bonus. It is so much clearer with HID lights..
U can get aftermarket HID's for $800 installed....
Honda Euro HID lights costs $550 each.. so a pair is $1100 from honda parts... (Thats for the whole cluster of lights)...
