Unfortunately, no one has asked you the important questions and told you what you need to know.
Firstly, have you purchased the Sony 12" in a sealed box or a ported box? Both are available and have very different output levels for the same input power. In a sealed box, it has a sensitivity of about 85 dB at 1 watt at 1 metre. That means that at 300 watts, it will put out about 110 dB. I don't have specs for the speaker in a ported box, but I suspect that it will put out maybe 3 or 4 dB more for the same power.
If you have no need for this much output, and never plan to drive the sub that loud, then you do not necessarily need to purchase as large an amp. On the other hand, if you buy an amp which cannot put out enough power to drive the sub loud enough for your needs, you are likely to destroy the sub and maybe the amp in the failed attempt to get enough volume out of the system.
As some people have already indicated, most good quality two-channel amps can be bridged to run a single much more powerful channel.
As for 6x9 speakers in the back, it does seem a little pointless to seat high volume full frequency speakers behind you, rather than in front of you. I would go instead for good quality speakers in the front doors, which will tend to offer you a more satisfying musical experience.
