wen i do mine im gona take em off but not detach the lines, remove the pads, sit them opened on blocks of wood or bricks next to the rotor, everything masked, and then paint em, give me more room to clean them + prep them properly and will be easy to make sure paint only goes on the caliper, not bolts, or rotor etc

I was wanting to strip my caliper paint so I can put a fresh coat on, can anyone recommend me a product to do this?

ok got my first coat on.
if you know how to bleed brakes (and its not hard!) i'd suggest removing the callipers completely. the time i spent masking 1 wheel properly - then doubled for the other wheel - i could have removed the callipers completely and bled the lines when done.
unfotunatley i can only do one wheel at a time which really sux! i'm not on very level ground and am reluctant to put the whole front up on stands :(
Removing calipers is the only way of doing it if you want a good finish

While you're painting them you might as well replace the seals

there's a diy here but you can do it without taking all your rims off... thats a bit extreme - and so is 3 bottles of fluid, you shouldn't need that much.
It can be done easily without help, just takes more time. All you do is: pump brake, open valve...., close valve, top up fluid. then repeat till you see clean fluid come out.
It's best to let the reservoir get as low as possible without letting air in so you don't contaminate too much of the new fluid with the old crap thats already in there. Just remember to keep closing the valve and checking your reservoir so it doesnt get too low.

i rate the blue u got there might try that one me self, whats the deal with the rotors rusting so much anyhow? mine where rusted 2 the shit when i picked mine up.
i must say am a bit more picky when i came 2 doin this, i used a screw driver with a proper sander attachment to get rid of the rust, then cleaned it up with some spirits, then using some high temp spray i sprayed the shit into a cup, then cause im so picky used a paint brush 2 do it perfect, gave it one coat, waited about 30min then did a second coat and left it over night.
Perfect :D
Now all i need to do are the calipars
