Yeah, just... practice? Before I ever drove anywhere outside my neighbourhood, I'd practised handbrake starts constantly in a loop near my house. I didn't drive in unfamiliar areas or on steep hills until i was confident in my technique. Perhaps just get more practice in a quiet area before you take to the road.
