This sort of tuning requires certain parameters to be continually monitored when making alterations to the air and fuel ratios and the use of a dyno. Much of this equipment is quite specialised and expensive.
I'm not sure if someone on here dynotunes cars professionally (they would be the best person to help you out if they're willing) otherwise if you're keen to learn then you may get better answers from a reliable and reputable tuner in your area. See if you can get one who is quite open and willing to explain things to you.
