im running 17x7 40 offset with a 25mm spacer effectively giving a 'theoritical' offset of +15mm and it rubs on hard corners and big bumps but thats probably because im tucking the whole tire and it hits the wheel well.

this is with buddyclub n+ set almost full stiffest as well.....fun ride haha

if i raised it a bit it prob wouldnt rub at all. plus got rear guards rolled and slightly lipped

damn that's some pretty nice fitment alex

A camber kit will help you a lot if you are scrubbing slightly on the guards as it worked wonders for me. You are right about fitting smaller tires as well, to run low offset rims on our small car needs undersized profile and undersized width to fit and look good.

in regards to the spacers, although they are not ideal and i know this, i did go to lengths to make them as safe as possible.

In my case i got hub centric spacers in which i machined the center bore to fit perfectly on my hub thus taking stress off the wheel studs. the spacer is then bolted on to the original studs and then has its own coming out of it.
