20" on stock height would look ridiculous. stick with stock wheels
BTW How would these look/fit on a s2000 with 1inch drop and what tyres sizes would be best.
17 x 8.5 offset 35 front
17 x 9.5 offset 45 rear

Don't know how it would look but it would definitely rub even with "only" a 1" drop.
I'd probably run 235/45 on front and 255/40 on rear or 225/45 and 245/40 for less chance of rub.
All corners will need a roll and bumper tab relocation on the rear I reckon.

17x9.5+38 is doable :P not worth it for rpf01 as the rims goes flat/concave at 17x9+45
im running 18x9.5 +38 on the rears! but with stretched 235/40's and about -3.0camber (on stock body)
i rekn u could do that with 17s with 255/40s on and about -3.5* depending on how dropped ur gona be!
my fronts are 17x9 +44 (with a 15mm spacer,so effectively +29 which is basically the same as 17x 9.5 +35)
with the 9+44 the front fenders were getting mangled without the roll.
got the fenders rolled and -1.7* it worked fine.
but with the spacer on, needed to get at least -3.0* to get any clearance with the fender and this was with 225/45's on.
so will be more of a mission to run 255's on 9.5 +38!
8.5" can also run 255's :P Mainly for looks I guess since the 9.5+35 will be easier to fit since the 255's stretch on the 9.5 on a 9+22 its harder to fit, that's if they're going for the concave look.

Im searching for new wheels at present so many options... I want 17x9 255 all around, just dont know what offset I can run, I only have rolled front and rear fenders, and shaved bumper tabs, and im not looking to change up to wide fenders or run overfender in rear any time soon.

You wont be saying that when your tires keep throwing dirt on rocks on your paintwork. My fronts do that. But the rears dont.
Plus best advantage of NON-Stag is you can evenly rotate wheels front and back. Running different offset changes that. You might as well run 17x10 in the rear.
